For breakfast today, we had Vegetable Omelet from Plantifully Lean, p. 52.  Megan didn't saute the onions enough, so it was kind of weird.  I really don't like it when they call a dish something that it isn't.  For example, this is called an omelet, but it has no eggs.  I don't understand the obsession with many healthy cookbooks to try to act as if these things are the same as regular dishes when they clearly are not.  I would much rather they call it an omelet replacement or an omelet substitute.  At least it would be more honest than this utter lie of a name.  I like almond milk, but it isn't milk.  It's the watery juice of almonds that can be used as a milk substitute.  Quit lying to consumers.  You put yourself in a dubious position when you lie to your consumers all the time.  There is nothing wrong with healthier alternatives.

Regarding this recipe, Megan also didn't cook the Moong Dal (the egg-looking stuff) enough.  She made it into more of a scramble than an omelet.  Next time, I would sauté the onions a LOT more and cook the whole thing longer so it has more texture.  It is also supposed to have mushrooms, but we didn't have any.  Salsa would have possibly improved this, too.  Avocado would be a nice touch, too.  As made, I would say this was a 2 out of 5.  With changes, I think it could be OK, maybe a 3 or 4 out of 5.
