Lunch today was Tune-In Salad from Be a Plant-Based Woman Warrior, p. 111.  This was only OK.  This seems to be a common recipe for plant-based cookbooks.  This is probably the third one we have tried, and they all taste about the same and nothing like tuna salad.  It isn't something I would want to have on a regular basis, but I can tolerate it if I have to.  Rating:  3 out of 5.  It needs something more.  Some jicama would help.
