Breakfast today was Breakfast Burrito from Plantifully Lean, p. 54. It was surprisingly pretty good. The fake eggs in it could have fooled me into thinking they were real eggs when they were actually beans (Mung Beans). They looked like eggs and had the consistency of scrambled eggs. By themselves, they don't quite taste like eggs, but they don't have a glaringly bad aftertaste like so many substitutes do. As is, I would rate this a 4 out of 5. It could be better, however. First, I would drop the mixed greens. They just don't go well in here. I would rather have more beans than mixed greens. Second, I think it would be a good idea to sauté some onions and possibly mushrooms, and add them to this along with more of that fake bean stuff. Lastly, it would be good to experiment with other veggies like salsa or peppers in this. With work, I think this could become a 5 out of 5 and something I would want to eat regularly. One last thing: we need to find a source for large whole-wheat tortillas.
Lunch today was Brooks’ Bagel from Be a Plant-Based Woman Warrior, p. 117. We used Dave's Killer Whole Wheat Bagels. They are soft and delicious. Megan left off the seaweed because it makes me projectile vomit. It is my kryptonite. These were bland. They need something to add some flavor and some texture. We could use Emma's ground beef substitute, possibly, or get some tofu and put something with good flavor on it. As is, these are a 3 out of 5, but with some work, they could be a 5 out of 5.
Dinner tonight was Rainbow Bean Slaw from Be a Plant-Based Woman Warrior, p. 151 (above), with Basic Baked Tofu Cubes from Be a Plant-Based Woman Warrior, p. 167 (below).
The slaw was basically a salad with a lot of cabbage in it and some black beans. It was tasty because we used the Seka Hills Pomegranate vinegar (which is really good). I would rate this a 4 out of 5. It would have received a 5 except it isn't enough for a meal on its own.
We paired it with the Tofu cubes, which didn't work so well. I wouldn't eat the tofu cubes again. They tasted like salt and soy. Rating: 2 out of 5.
