For lunch today, we had Buffalo Chick’n Wrap from plantyou, p. 110, and Balsamic Pasta Salad from plantyou, p. 120. The wrap is pictured above the salad below.
The wrap was bland. I put some hot sauce on it to add some zing, but it still needed something else. The tofu was supposed to be crunchy, but it wasn't. That would have helped with the texture, but it also needed more flavor. Next time, we should cook the tofu longer. I would rate the wrap a 3 out of 5. With more flavor, it could be a 4 out of 5. We need to work on it. It has possibilities.
The salad had some very salty olives, but they didn't overpower it like I thought they might. They added a bit of punch that helped with the flavor, as did the fresh basil. Megan put in fresh tomatoes and spinach instead of cooked, which is always better. I would rate the salad a 4 out of 5, and I could eat it regularly (once a month) in the summer.
