For dinner tonight, we had Hungarian Mushroom Soup from Plantifully Lean, p. 138, with Black Bean Salsa, p. 21,3 and Baked Corn Tortilla Chips, p. 210.  


We've had the chips several times, but I finally remembered to take a picture of them.  They aren't anything special, just tortillas that are baked, but they are crucial when you need or want some crunch.  The other thing I like about them is that they have no oil or salt, so they're much healthier than store-bought chips, and they are simple to make.  They don't have a lot of flavor (due to no oil or salt), but they do have that needed crunch.  I would rate them a 4 out of 5.

The black bean salsa is pretty basic and needs some work.  We have a better recipe from the Kramore Inn in Chico.  It's amazing.  This recipe needs to have some things added to it, like bell peppers and maybe some celery.  A little balsamic vinaigrette might help, too.  I would rate this a 4 out of 5 because it's OK and easy to make, if a bit bland, and helps me get the protein I crave.

I saved the best for last!  The Hungarian Mushroom soup is very good.  Not quite as flavorful as I would like, but still very good.  The recipe doesn't make enough.  It needs to be doubled.  I wish I could think of something to add to it to enhance the flavor a bit more.  As is, I would still rate it a 5 out of 5, and I could eat this about 3 times a month.
