Lunch today was Easy Lentil Curry from Plantifully Lean p. 127. This recipe was only OK. It smelled great while it was cooking. It took about 90 minutes to make (including cooking time since the lentils were dried). It was kind of like bland baby food. The lentils were so overcooked that they brokedown into nothing but a sauce. There really wasn't enough texture. Megan added some tofu, which helped a little, but tofu is bland and textureless, too. It would have been better with some chicken and maybe cooked the lentils less. The curry was a bit underwhelming as well. As is, I would rate this maybe a 3 out of 5 at best. I'm not sure I'd want to eat it again. It would need some work first.
