For breakfast this morning, we had Sunrise Smoothy from Plantifully Lean, p. 80. It was bananas, strawberries, and an orange, plus some almond milk. The strawberries were frozen because it is winter. I think this would be much better in the summer when the strawberries are fresh and sweeter. I would also like to try it with oat milk. I think that might make it a little richer. It was too cold for a winter breakfast. It also didn't fill me enough. I got hungry about 2 hours later. Maybe some plant-based protein powder mixed in? Anyway, as is, I would rate it a 3 out of 5 overall. 2 out of 5 for winter and probably a 4 out of 5 for summer. With a few tweaks, it could be a 5 out of 5.
For lunch today, we had Nachos from Plantifully Lean, p. 217. This dish was OK as is, but it was designed kind of stupidly. First, don't put the chips on the bottom. Yeah, it looks nice, but it makes them soggy. I would recommend putting everything in a separate dish, so people can build their own with the ingredients they like. For example, I love beans and hot peppers, so I would add more of those. It would also make it easier to make leftovers, so you could have this again the next day. The other thing I would change is to make the beans hot. Most nachos are served hot with the veggies cold. That is part of the contrast that makes it good. More beans would also be a good idea. There weren't many in this. With changes, I think this could be a 4 out of 5 or even a 5 out of 5.
