Today is the first day of our LiveWell eating plan, which is weird to say because there really isn't any plan other than eat plant-based and healthy.  The trick is finding tasty recipes that meet those guidelines.  For breakfast, we had Morning Commute Oats from Be a Plant Based Woman Warrior, p. 56.  This was an easy-to-make recipe that was very good.  I could probably eat this 2 - 3 times a week.  I would rate it a 5 out of 5.  It had a lot of flavor and fruit.




For dinner tonight, we had Easy Enchiladas from Plantifully Lean, p. 93.  They were only OK.  They use Chipotle sauce and too much of it.  The Chipotle flavor was overpowering.  I would cut the Chipotle in half, add avocados, more lettuce, and lots of fresh tomatoes.  I would also replace the refried beans with whole Pinto beans.  As is, I would rate this a 3 out of 5 at best and maybe a 2 out of 5.  I can eat it, but it wasn't very good.
