Tonight we had Herb Roasted Family-Style Chicken from The Complete Low Carb Cookbook p. 105 with Summer Squash Saute (p. 154) from the same book.  The chicken was supposed to breasts, but Megan wanted to use thighs but we couldn't find any at the store.  Thighs would be much better.  It took about 1 1/2 hours to cook, much longer than expected, but it was also supposed to be boneless, skinless (tasteless).  This was much better.  I would rate the chicken a 5 out of 5, but would use bone-in, skin-on, thighs next time.  The squash was undercooked, almost raw.  I think it would be better to put these together as a one-pot meal, remove the foil about 20 minutes before it is done, and add the tomatoes at that time.  I would rate the veggies as a 4 out of 5 or maybe a 5 out of 5 if cooked more.  The dish was mild and we liked it.
