Two nights ago we had Creamy Garlic Skillet Chicken with Spinach from the Eating Well Website. The next night we had it with brown rice and quinoa instead of noodles, which was much better. My wife added mushrooms to it which made the sauce thinner, which wasn't good. It needs to be thick, so you might want to add a thickener. The mushrooms were tasty but you need to make sure you cook them a lot to get rid of all the water in them.
Next time I would brown the mushrooms more, thicken the sauce, have it over rice, and also make a lot more of the sauce. There really wasn't enough. You probably need about three times as much sauce. Lastly, cook the spinach as little as possible. If you do all of these things, it is quite good. I would rate it a 5 out of 5 then.
