Today we had Pepper Steak Stir Fry from The Complete Low Carb Cookbook with Italian Eggplant Fries from the same cookbook.  Both were quite good.  I've had a lot of eggplant recipes that weren't good at all and a few that were very good.  This one was flavorful, unique and we dipped it in a marinara sauce which added even more flavor.  The one downside is that it is fried.  We're going to try baking them without oil next time.  I like that they were dipped in almond flour.  It made them even tastier.  

The stir fry was also quite tasty and unique.  Not overly spiced like some I have had.  Simple but good flavors.  Not too much salt either.  

I would rate both a 5 out of 5.  I could eat these regularly and while I liked the stir fry a little better overall, I think the eggplant might be more useful in the long run because it can be added to just about any main dish.
