 Tonight we had Pork Tenderloin with Mustard Gravy from The Complete Low Carb Cookbook and Stuffed Eggplant Parmesan from the same cookbook.  The pork was pretty good.  I'd rate it about a 4 out of 5.  It needed to be warmer when we ate it and the sauce was too thin and too cold.  If we improved those things,  it would be a 5 out of 5.  The eggplant was only OK.  It lacked complexity of flavor.  It was bland and needed something more.  Mushrooms would help, but not enough to make it really good.  I'm not sure what else we could do to make it better.  Maybe a little more cheese or some oil?  I would rate it a 2 out of 5 as is.  With improvements, it could be a 3 out of 5.
