Tonight we had Black Bean-Vegetable Soup (above) from the Veganomicon cookbook with Skillet Cornbread (below) from the same cookbook.  Both were bland.  The soup needed more beans and more flavor.  The Dr. Fuhrman Black Bean Soup Recipe is better and probably healthier too.  I would rate this a 2 or possibly a 3 out of 5.  I'm not sure how to improve it.

The Cornbread wasn't too bad, but again too bland.  It used some sort of weirdo sugar.  I think it was called Monk Fruit Sugar.  It didn't have an odd taste like most of the fake sugars do, but why not use the real stuff?  I don't want to use exotic chemicals just to avoid a few calories.  Cut back on the sugar if needed or use honey.  I'm not sure what I'd do to make this cornbread better.  Megan uses my mom's old-fashioned recipe for cornbread and it is both healthier than this (because it uses less flower and more medium ground cornmeal) and tastes a hell of a lot better.  So this one is going away too.  So much for the Veganomicon cookbook so far.  That's two strikes and no hits!
