 Tonight we had Jalapeno and Cheddar Corn-less Cornbread from the Complete Low Carb Cookbook.  It was pretty good.  It reminds me of Marie Callender's Cornbread.  Very sweet.  Strangely there is no corn in it.  It uses almond flour.  Rating:  4 out of 5.  This would work as a pretty decent bread for a lot of things.  I wish it wasn't so sweet, but that is all the flavor it has pretty much.
