Today we had Sauteed Chicken Cutlets with Romesco Sauce from The Complete Mediterranean Cookbook for dinner. We were supposed to use chicken breasts but we used thighs instead. Breasts would have also been good but not as juicy. This was really good. The Romesco sauce was very tasty. Sweet with just a hint of smokey flavor. Rating 5 out of 5.
