Tonight we had Roasted Eggplant and Tomato Soup the Complete Mediterranean Cookbook. It was pretty good but too sweet and too watery. I would want to fix these things before having it again. It also needs something to go with it. It just isn't enough food as is. Rating 3 out of 5 but could become 4 out of 5 with some work.
