For dinner tonight we had Marinara & Mozzarella Meatloaf from the Low Carb Cookbook and Broccoli Rabe with Garlic and Red Pepper Flakes from the Complete Mediterranean Cookbook.  The meatloaf was really good!  It had a bit of Italian flair to it and being low carb, it had more meat and no oats or bread in it.  Very flavorful with the cheese and low carb marinara sauce.  I would rate it 5 out of 5.


The Rabe would have been good but Megan put about 5 times the amount of red pepper flakes in it she was supposed to and it overpowered it.  I think done properly it would be a 4 out of 5.  Tasty and kind of different.  A good low carb vegetable dish to go with the meatloaf.
