Tonight we had two recipes from the Forks Over Knives cookbook. Above is a picture of the Autumn Mixed Greens Salad. This is the first recipe from this cookbook that I have liked. It had plenty of flavor and was simple to make. The flavor was a bit complex too which made it better. I would rate this a 4 or 5 out of 5. I could eat this regularly in the fall.
Below is a picture of Pumpkin and Anasazi Bean Stew. My wife used Pinto beans because she couldn't find any Anasazi beans in the store this week for some bizarre reason. This, like most of the Forks Over Knives recipes, was AWFUL. NO FLAVOR. Flavor doesn't have to come from fat or salt. Seasonings work fine, but this recipe had hardly any. Blandsville. I wouldn't eat this again. It wasn't bad, just bland. Rating: 2 out of 5.
