Today for breakfast we had Pumpkin Pancakes from the China Study Cookbook.  They were very good!  Hard to keep from sticking in the pan, but had great flavor, especially considering that they didn't have eggs in them.  I would rate these a 5 out of 5.  I could eat them on a regular basis.  One of the best pumpkin pancakes I've had.
