Tonight we had Caribbean Salad with Guacamole (above) and Peanut Kale Soup (below).  I didn't care much for the salad.  It had some odd flavors, probably from the plantain.  I  wouldn't make this again.  Rating:  2 out of 5.



The Peanut Kale Soup was surprisingly good.  I thought I would hate it.  I don't generally like kale, but this wasn't bad.  It had a mild flavor that was pretty good.  I think we could make it better by adding some celery, more peanuts, and possibly some peppers.  I wouldn't want to have this often, and it didn't provide much food being mainly water, but it was pretty good.  Rating:  3 out of 5.  Both recipes came from the China Study Cookbook.
