Megan made Pumpkin Pie Muffins with Pecans for breakfast this morning.  This was a recipe from the China Study Cookbook.  Overall, it was pretty good but heavy and not sweet enough.  She forgot the cinnamon which probably made a difference too.  I would add about 1/4 cup more sugar next time.  I would like to find a way to make them lighter without removing the whole wheat flour (We used King Arthur's White Whole Wheat flour).  Overall I would rate these as a 4 out of 5.  With a little work, we could probably make these into a 5 out of 5.  Honey would be another option to add more sweetness.

REVISED:  Megan made these again and this time used the proper sugar and added cinnamon.  They were much sweeter.  No extra sugar is needed.  I would still double the amount of pecans.





Tonight Megan made Happy Time Portobellos from the China Study Cookbook.  They weren't bad but weren't great either.  They needed more flavor and the mushrooms were too watery.  Next time we should roast them longer.  I think I'd want to find a more flavorful sauce.  The orange-pink one above was pretty good but the others didn't have all that much flavor.  I'd rate this a 3 out of 5.
