For lunch today we had Baked Falafel in Pita with Cucumber Dill Dip. Both recipes came from the China Study Cookbook. I didn't like this. The falafel wasn't very good and the cucumber dill dip tasted too much like cucumber (which I don't like). I would rate it a 2 out of 5. I wouldn't make it again.
For dinner tonight we had Fresh Tomato and Avocado Pasta Salad. It's from the China Study Cookbook. This one was...OK as designed by the recipe. A bit bland. It could be much better with a few changes. First, it needs some bell peppers and celery to add crunch. Right now it is all mush. Also, I would add more onions and probably some freshly diced hot peppers to it to. Maybe some thyme would help too. It isn't great yet, but it could be. As is, it's a 3 or 4 out of 5, but it would be pretty easy to make this a 5 out of 5. Good side dish.
