We had Egg(less) Salad Sandwiches for lunch today.  This recipe is from the China Study Cookbook.  It was pretty good but not as good as the Sweet and Creamy Chickpea Salad Sandwich recipe we got from Matt.  This recipe was too spicy for me (or maybe it had too much vinegar.  It also was missing some texture the other one had.  I'd rate this a 3 out of 5.


For dinner tonight we had Broccoli Walnut Salad (left) and Samosas Baked to Perfection (right).  The Broccoli salad was OK, but not great.  We have a really good broccoli salad recipe that isn't all that healthy that is MUCH better.  It's not exactly unhealthy but does have mayo.  I think I'd rather make my other one healthier than mess with this.  Rating 3 out of 5.

The Samosas were a heck of a lot of work and weren't very good at all.  I would rate them 2 out of 5.  The bread part was fine but the insides were bland and had fennel seeds (which I hate).  I wouldn't make this again.
