Tonight we had Easy Vegan Thai Cabbage Salad for dinner. We got this recipe from a friend. It was really tasty! We put too many noodles in it I think. They come in a three pack and we probably should have only used one bag. It was heavy on the noodles and didn't have as much cabbage as I think it should in order to be healthy. It was also a little light on the sauce (which I'm OK with since the sauce isn't all that healthy). I really liked this and could eat it regularly. I would rate it a 5 out of 5 and I'm adding it to our diet plan with a few tweaks to make it healthier. Besides fewer noodles and more cabbage, I would add a little more lime than we put on it. It really gives it a pop of flavor.
