For dinner tonight we had Eggplant Cannelloni with Pine Nut Romesco Sauce.  I really didn't expect to like this recipe but I was pleasantly surprised. It tasted quite good!  I could give it a rating of 4 out of 5.  It makes a nice winter dish.  I would eat this about once every three or four weeks.
