We had these two things for dinner last night, Greens and Berries Salad with Raspberry Dressing (above) and Black Bean Salad in Avocado Baskets (below).
The berry salad was very sweet and refreshing. It would be great on a hot day. We didn't have any raspberries, so we used strawberries. There were fine. The dressing was good too. I could eat this fairly often, probably twice a month.
The avocado baskets were good too. We made them with the outer skins on, which made them harder to eat but less messy. Next time, I think I would take the skins off first to make them easier to eat. I might even just cut up the avocado instead to make a salad out of it. I could eat these maybe once a week or once every two weeks.
