For breakfast this morning, Megan made Banana Cocoa Muffins.  Absent from the name, but included in the muffins is 8 ounces of spinach.  That is a whole bag of spinach.  I didn't think I would like them but they were better than I expected.  They gave me heartburn for about 20 minutes but tasted OK.  It is important to really blend the spinach.  It took a long time to make these and then they had to cook for about 40 minutes, so don't make them unless you have a lot of time.  It did make a lot of muffins.  I could eat these once in awhile, but not often.


For dinner tonight we had Basil and Spinach Pesto.  We had it on cold black bean pasta.  It was pretty good.  A little weird (because it sort of tasted like pesto but sort of didn't).  It would be a pretty good dish to have with something else.  I'm not sure if I would like this warm or not.  I could eat this once in awhile but not often.

A couple of ideas for the pesto from the Dr. Fuhrman website that sound interesting:  1)  Freeze it in an ice cube tray.  Then you can put one cube on what you are eating.  Makes it easy to reuse.  2)  Put it on burgers, pizza, tomatoes (with a little balsamic vinegarette), or use it as a sauce on pita bread.
