For breakfast, we had Blueberry Coconut Cream Oatmeal. It really did taste creamy. This was another oatmeal recipe that was a lot like many of the others we had with a slight variation. I could eat this about once a week.
My weight this morning was 242.1 lbs. My fat mass was 36.6% and my BMI was 33. My weight went up by 1.8 lbs this week, my fat mass improved by 3.1% and my BMI was unchanged. I'm kind of frustrated that my weight went up but I'm not surprised. Megan and I are reorganizing our kitchen. We're trying to get this done before we go back to work in about a week. For four days during this time, we had to go out to eat because we couldn't use our kitchen to prepare food like we normally would, so I expected my weight to go up. The reason this is frustrating is that next week we will also be off diet while we are on vacation. I'm looking forward to being able to eat at some nice restaurants. However, when I get back I will have even more weight to take off. I miss our routines we have during the school year.
For dinner tonight we had two dishes. The first (pictured above) is called Broccoli Fra Diavolo. It's a kind of Italian dish. It was spicy and filling. It needed to be paired with something different than the Thia dish we made to go with it, however. By itself, the Broccoli was pretty good but it wouldn't make a complete mail. It needed something more.
The Thia dish, Black Bean Spaghetti and Vegetables with Thai Coconut Sauce (pictured above) wasn't nearly as good. Very sweet. It was much lighter, almost dessert like. It also needed to be paired with something else.
