Eat to Live, Week 4, Day 6
This was our dinner tonight and boy was it good! One of the best recipes we've had. It's called Thai Vegetable Curry. We had it with quinoa. It needed a bit more curry and I added some red pepper to give it more zing. Tasty! Would have been so much better with a little chicken.
The salad we had with it was called salad with romaine lettuce and shredded Napa Cabbage with a Lemon Basil Vinaigrette. It was OK. The dressing was pretty good but thin.
