Eat to Live, Week 4, Day 2
Well, we are halfway through the six-week program! Last night we went out to dinner. Megan tried to stick with the diet mostly. She had a veggie burger. Weirdly it seemed to be soaked in oil. I thought it tasted terrible! I had a steak that was pretty good. It seemed heavy. I guess I'm starting to get used to not eating food.
For breakfast this morning we had something called veggie scramble. It can be made with eggs or tofu. Basically, it is spinach, tomatoes, and eggs. It wasn't too bad. Next time I would put some salsa over the top and put the tomatoes on fresh instead of cooking them.
For lunch, we had Kale and Quinoa Salad with Blueberries and Mangos. It had a dressing made out of balsamic vinegar, raisins, lemon juice, walnuts, vanilla, and cinnamon. The blueberries and mangos were good. The quinoa was pretty good. We chopped up the kale to make it more palatable to me. I hate kale. I was able to eat this only because the kale was in small pieces and the fruit and dressing gave it a flavor that overpowered the kale. I didn't care for it much. It didn't seem very filling and I would have liked to have had something with more protein at lunch. A picture of it is below.
For dinner, we had a salad with baby greens, tomatoes, and raw onions and a creamy Italian salad dressing and something called Zucchini Linguini. For dessert, we had Chocolate Cherry Ice Cream.

I didn't care much for the Zucchini Linguini. I wish they wouldn't call these recipes by names they are trying to imitate but failing at horribly. This tasted nothing like linguini. The vegetables were barely cooked. The "sauce" was nothing like spaghetti sauce. It tasted pretty awful. I wouldn't have it again. If I did, I'd at least make a sauce that tasted like spaghetti sauce. Then it might be eatable.
A picture of the Chocolate Cherry Ice Cream is below. Again, I wouldn't call it ice cream. It isn't. It wasn't bad, just not ice cream. More of a slushy chocolate cherry dish. I could eat it again but would blend the dates more next time. It was pretty tasty actually.
