Eat to Live, Week 4, Day 1

Well, I lost 4.2 lbs this week!  I've now lost a total of 13.4 lbs!  I'm down to 251.3 lbs.  We used the stricter, aggressive weight loss plan this week and it helped (though it was harder too).

Today we decided to try making some almond butter.  Some friends gave us a jar of almond butter awhile back.  When we started this diet, some of our recipes called for almond butter, so we finally got around to opening it and trying it.  Almond butter is really good!  I like it as well, if not better, than peanut butter.  

We put 3 cups of almonds on a cookie sheet in the oven for 20 minutes at 170 degrees to soften them and get the oils to release more easily.  Then we put them in our new Breville food processor (which we really like) and ran it for about 15 minutes.  I first pulsed the almonds a few times to break them up and then just ran it for 15 minutes stopping every minute or two to wipe the sides of the container down so everything mixes well.  At about 8 minutes it started looking creamy, but it still had a slightly gritty texture, so I kept it going until 15 minutes.  By then it was about the same texture as the stuff we bought.  Here is what it looked like as we finished.

And here is our jar of almond butter next to the kind we bought (which is very good).  Interestingly, Maisie Jane's is darker.  I'm guessing that it because ours is fresh and hasn't had time to darken yet.  We did use almonds that we roasted ourselves (at a low temperature).

Tonight we are going off of our diet.  We're halfway through the six-week program, so we're going out to dinner and see My Fair Lady.  It will be interesting to see how it goes.
