Eat to Live, Week 3, Day 2
Breakfast today was Eat Your Greens fruit Smoothy. I had trouble eating it. It tasted weird to me. Not terrible but strange enough that I had trouble eating it. After last night's Kale, I decided to eat something I liked, Quick Banana Walnut Breakfast instead.
This was our lunch today. It's called Mexican Salad. It was very good. It needed a little more beans, but otherwise pretty filling and had a lot of flavor. I did find that the next day the salsa didn't hold up well so this would have to be made fresh.
I found something to help me with menu planning. It is a general guideline for Nutritarian eating (what Dr. Fuhrman calls his system). I'm generally not a fan of made up words like nutritarian. Here is a graphic below.
By following this, I think we can better build our menus.
Dinner tonight was a mixed bag. On the left is the soup, Creamy Cabbage soup. On the right is Salad with Baby Greens, Tomatoes and Raw Onions (green onions). The dressing is Orange Peanut dressing.
The soup was anything but creamy. I would call it gritty. It was hard to keep down. I got about 1/4 of the way through my bowl and had to stop. I'm finding that I don't like things that are gritty. The salad was pretty good. The dressing was tangy and flavorful. I'm not sure how well the dressing would hold up for lunch the next day. For dessert, we're having a mixture of blueberries, strawberries, and raspberries.
