Eat to Live, 6 Week Plan, Week 1, Day 6



It was a cool misty night so Megan decided to make this soup, Buenas Noches Black Bean Soup.  It has black beans, onion, celery, carrots, garlic, cumin, corn, and a few other things.  It had a bit much chili pepper in it for my taste but otherwise was pretty good.  She forgot to put the tomatoes in, so that would probably tame it down a bit.  We're going to put them in and try it again.  Interestingly, they have us blend some of the beans, probably to make it thicker.

I'm trying to figure out what we could have with this that would be healthy and go with a soup like this.  Of course, I want homemade buttermilk cornbread with lots of butter, but alas, that isn't happening!  If anyone has any ideas for things to have with it, post them in the comments.
