 Eat to Live, 6 Week Plan, Week 1, Day 4

I remembered to shake the almond milk before putting it on my sugarless oatmeal this morning and it was much better.  Both Brenda and Heather recommended unsweetened, vanilla almond milk.  We accidentally bought some that has a small amount of sugar and no vanilla.  I will buy some of that soon.  I'm looking forward to trying it.

I woke up with a headache, but I'm not sure if that was withdrawal symptoms or just being tired from staying up late and working too hard.  This afternoon it went away.  So far the withdrawal symptoms haven't been bad if I've even had them.




This was our dinner tonight, Easy Bean Salad.  It was nice not to have lettuce for once.  We used small white beans which were kind of gritty.  I wouldn't use them again.  They recommended Cannellini beans.

The recipes continue to be flavorful.  That is the biggest surprise for me so far.  The hardest part is going to be eating so much salad.  I'm glad the strict part only lasts for 6 weeks.

We've made it through half a week!
