Eat to Live, 6 Week Plan, Week 1, Day 2
This was our breakfast this morning, Cinnamon Spiced Baked Oatmeal with an apple. It was surprisingly tasty. I keep expecting all the meals to taste either sour, bitter, or like cardboard. So far, they've been pretty flavorful. It didn't take long to make either and just 30 minutes of cooking in the oven.
Megan and I had to spend some time planning out our menu for the week. We don't have all the right types of containers for taking large salads to school so we have had to do some planning to make sure things are going to work.
Shopping included a surprising amount of stuff. We needed some spices we didn't have and we wanted to try all the different kinds of fake milk (Almond, Hemp, Cashew, Soy, etc.) to see which ones I could stand. Because we eat salad as our main entree for both lunch and dinner, there was a lot of leafy greens too, along with quite a few beans. Below are the pictures of all the stuff we bought from the store. That's a lot of food!
For lunch, we had Black Bean Mango Salad and a few fresh strawberries.
So far, at least, I haven't really been hungry. Since I can eat as much as I want of the salad and fruit, I do fill up, but it is a different kind of full, not a heavy. In the book Eat to Live, Dr. Fuhrman said most of his patients experience headaches and other symptoms as their bodies adjust to eating a more healthy diet. So far, I haven't had any of these withdrawal symptoms. I keep expecting them, however.
For dinner, we are having Tex-Mex salad with oranges for dessert.





What a great start! I totally want to read it and get some recipes. As far as fake milk goes, I prefer almond (unsweetened vanilla) and coconut (unsweetened). I, too, have been really trying to watch sugar intake. Great job!
